Been A Little Busy



I haven't been updating much because in my spare time (other than being a mommy to 3 of the most wonderful little girls in the world), I've been studying towards my birth doula training certificate. Okay, I may be watching tv a little bit too.

I'm really into Jane the Virgin right now, but that's another blog post! I've had to do a lot of reading for my certification and I find it pretty easy to read with the kids around, even if they're being noisy. I don't know, maybe because I grew up in a noisy household? But while the kids are in school, that's where I do a lot of my reading and writing assignments.

As a relatively new vegan, I've also been trying to find new recipes and new ways of cooking things. I can't just eat stir fry and brown rice every day (no matter how much I love it!). With the kids being vegetarians, it's a bit easier because they like cheese so they can still eat cheese pizza or mac and cheese, which I've never been a fan of anyway. I think tonight, I'm probably going to make something different, as we had stir fry and brown rice last night! Perhaps vegan chicken. Chickin'? Chikkin? There are many different ways of spelling it to let people know it's not from an actual chicken, I guess.

But What Do You Eat??

3 months as a vegan, and I'm still asked "but what do you eat?". I think people assume I just eat salads and apples. Yes, I do eat salad and apples, especially apples because they're delicious, but I honestly don't eat a lot of salads! I'll put lettuce, kale and/or chard on sandwiches or even in my juice when I'm using my Nutribullet! But I'm not crazy about salad. Every now and then, it's good.

I do eat a lot of potatoes, green beans, kidney beans, refried beans and a lot of stir fry. I love brown rice and pasta with red sauce (as long as it's vegan). But I have felt like I'm missing out on things when people are eating baked goods around me. So I had to figure that one out!

I'm lucky there's a Whole Foods and a Trader Joe's nearby. They both have baked goods that are vegan, but do you know how much Whole Foods will cost you if you go there regularly? I'm a mother of 3, I don't have Rockerfeller money. I'm no Trump (thank God!) and I'm certainly not living it up in Beverly Hills (though I live not too far from there...okay, a little far...I'm kind of in the valley).

So I decided to share with you a few foods I've discovered lately and some recipes I figured out on my own or found online! I'll update this blog with foods I've tried from time!

Soon I'll post on this blog about how I discovered cake mix that you can add soda to! Yes, that's a thing! And it's good! Especially when you add Sprite to lemon cake mix with lemon frosting! Have you tried the lemon iced cake at Starbucks?? This is better! Tomorrow, I'll post it, I promise!

Hey guys!

I've had a Pinterest account for a while, probably over a year. I've added a lot to it, then I forget it exists (just like I do with Tumblr). But as of late, it's been quite helpful (now that I've figured out how to use it! Haha!).

I've been eating vegan for almost 3 months now and my children are vegetarians. I'm constantly trying to find new recipes to try or make vegan or vegetarian friendly meals that I can make for my kids. It's been really easy to find good recipes online that don't take too long and are actually really good. I have very picky kids (at least the twins are!), so it's always been hard to cook for them. One thing they always eat is noodles, but I no longer wanted to make them the cheap Ramen noodles with the little chicken packet seasoning. A, because it's not vegetarian and b, because it's not very good for you! Have you noticed how greasy it is? It was just fine eating it growing up, and when I was in college and working as a telemarketer! I've discovered rice noodles and I've been buying them from Korean grocery stores in bulk, since I live not that far from KoreaTown in Los Angeles!

And there are so many things you can do with noodles! But that's another post! In the meantime, try looking at some of my Pinterest boards if you're looking for great recipes that your kids might enjoy!

Watching DIY Videos With My Girls



Lately my twin 6 year old daughters are very much into watching cooking shows and HGTV House Hunters and things of that nature. They like looking at houses, watching people cook and dreaming up what kind of house they'd want when they're older. Mia says "I want a huge house with a pool and a dog and a cat and a bunny and I want to be a baker". My Laila just likes pointing out how her house would be decorated. The outside of it will be green, of course. And Mia's house will be blue and they'll live next door to each other, and then next door to us and Anneka, they're older sister who's 8.

I've also gotten them into DIY Youtube videos. The girls will sit on my bed and watch Youtube videos on my MacBook Pro forever! I just wanted to share a few of our favorite DIY videos from Youtube!

The girls really liked this one. They want to create wings just to play around the house in!


All three really liked this one, though as My Little Pony fans, they pointed out there was a mistake in this costume...Rainbow Dash isn't a unicorn, thus, no horn! Oops!


I promised them we can do this one together. Of course, we have cereal boxes around the house! They always want to keep one or two and I have to sneak and throw it away! But hey, I can make a notebook out of one! Repurpose, right?

Crock Pot Slow Cooker Ideas!


I just got a Crockpop Slow Cooker as a gift from my sweet aunt from Chicago. Actually, let me be more truthful...I got it for Christmas and it's already April and I've only used it twice. I know, I know, I'm terrible.



I wanted one really badly because my friend Luisa kept talking about the yummy things she was making in her slow cooker. The first thing I made was chicken soup. It was the winter and it seemed like the girls were taking turns getting sick, so I made a huge pot full of soup! I had a lot of vegetables in it, including baby carrots, sweet corn and huge chunks of cut up potatoes. My husband then went and got a rotisserie chicken from the Costco near us and cut it up and added it to it right before it was done cooking. Oh! And rice! Plenty of rice! (We love rice in my house, it goes fast!) I prefer Jasmine rice, but I guess any rice will do. Next time I think I'll use brown rice, but my concern is always it getting too mushy too quickly. I also used Trader Joe's broth. It's really good and they have a good selection.

Since then, I haven't come up with any new ideas of what I can throw in to the Slow Cooker. I have a recipe book that my aunt got with it, but I seem to always forget that you can make things other than soup in it! And I love household gadgets and small kitchen appliances that make life easier (especially with having 3 kids!)


The house smelled really good while it was cooking! The vegetables weren't overcooked or too soft and the kids loved it! We all ate a bunch! Especially my carrot-loving children!

Sick Kids

After sitting in the house non-stop for almost the past week, I could really use an outlet. All I've been doing is taking care of my sick family. And I myself have been fighting off a cold. 

It's really a shame that the kids are sick again. They've fought off several colds and allergies since they've started school. It's Kindergarten and I'd like to think its not a big deal that they keep missing, but is. They're learning to read and learning basic math. Missing days means they're missing valuable knowledge. And trying to teach them at home, with all of the distractions, can only do so much. 

It started with my husband getting sick. We thought it could be food poisoning as he was the only one who was sick, and he'd eaten a different dinner than us. That next morning, he woke up, throwing up a lot. I'd never seen him that sick before. He then began running a fever. I took the kids to school, then went home to take care of him. 

The next day, he still wasn't feeling well enough to go to work. By Wednesday, Laila was vomiting also and running a fever. It got to be so excessive that we took her to the emergency room. They gave her medicine to stop the nausea. She then missed 2 days of school. 

I got paranoid, assuming one of us was next. The doctor said it was probably a stomach virus, which is highly contagious. We cleaned the house, top to bottom. Lysol wipes, a can of Lysol, vacuuming, everything. But by Sunday, during the Super Bowl, Mia got a runny nose. Then a fever. Monday, she woke up vomiting also. Couldn't catch a break, Huh?

So here we are now, Tuesday of that following week and Mia has been to the emergency room and got the same medicine, except now she's running a fever again. And it's easy to say it's no reason to panic until you see your kid, who is usually very active and silly, just laying there, uncomfortable and miserable. The medicine helps some. Her temperature is t too high, but I can't relax until it's completely gone. On top of all of this, I'm fighting off a cold that just won't go away and I missed my doctor's appointment last week because I was taking care of my sick husband and didn't want to leave him alone. 

I sometimes forget I have to take care of myself too, as I'm not sleeping enough or eating enough. This is probably why I'm still fighting a cold, more than a week later. 

I'll reschedule my doctor's appointment. I'm praying that Anneka and me don't get this stomach virus. I can't afford to be that sick. Too much to do and too many people to take care of.

New blog! Same me!

This is my separate "mommy" blog! Hi all!
To people who read my other blog, this blog is going to be more about my life in Southern California with my kids.
I'll also post healthy recipes that I want to try or have tried, Los Angeles-area going-ons and cute little stories about my 3 daughters, Anneka, Mia and Laila.
I encourage moms from all over to subscribe to my blog and I'll also open a "guest blogger" feature in the future.
I'll also be posting interviews with other moms and videos.
